WHOLE “TRICIO” PEPPERS
These Najerano variety peppers are grown in La Rioja region. They are hand picked, char-grilled in a wood stove and naturally peeled. They are then poured in a jar with their own juice, without the addition of any Chemicals, and bain-marie cooked. All the process is entirely artisan.

EXTRA VIRGIN OLIVE OIL – ARBEQUINA BY CASAS DE HUALDO
It is a harmonious, fragrant and delicate olive oil. Its full flavour can only be achieved by using the best quality olives and by being meticulous in its preparation. The oil has an average intensity, with predominating fruit notes that stand out over its bitterness and spiciness. with nuances of tomato plant, recently cut herbs, artichoke, dry almond and apple.
Use: Pour over tapas, salads, pasta, bread or just drink with a spoon!
CANTABRIAN ANCHOVY FILLETS IN OLIVE OIL – LA LATA DE BRAULIO
These authentic Cantabrian anchovies are meticulously selected and handmade processed. Each anchovy fillet is cleaned and boned by hand. Their maturing period is six months. They are finally canned in virgin olive oil. These are not your everyday canned anchovies, you can taste the superior quality and delicate hand crafted flavour.
SPANISH SMOKED SWEET PAPRIKA- PDO PIMENTON DE LA VERA
La Vera Paprika is obtained by grinding mature, dried peppers. Peppers are dried using Oakwood, that generates sufficient heat to dehydrate the fruit perfectly and gives “Pimentón de La Vera” its three main features: Aroma, Flavour and Balanced Colour.
Its Aroma and Flavour are obtained by using a traditional smoke-drying system, while its Balanced Colour is due to the high concentration of carotene, which is absorbed by peppers as they grow in the distinctive soil and the microclimate of LA VERA.
Use: Sprinkle on cheese, meats, tapas and stews.
ARTISAN MANCHEGO CHEESE PDO – MATURED 2-4 MONTHS – DON GREGORIO
Artisan Manchego Cheese P.D.O. Aged for 2 months min. Made from 100% Manchega sheep’s raw milk. This cheese has a medium flavour and is preserved in oil, resulting in a light spicy finish. Perfect on it’s own, in tapas or as an accompaniment to pasta and salads.
Advice: Pull out of the refrigerator at least 1/2 hour before serving.
IBERICO BELLOTA SHOULDER HAM – COTO DE GALÁN
Cured over a period of 22 to 42 months, ham shows a characteristic colour that ranges from pink to purple, with marble colour fat streaks among the muscle fibres. Meat is slightly salty and the texture is just a little fibrous. Flavour is delicate and aroma is pleasant.
