Potato adds the all important carb element for energy, and also fills you up rather than leave you hanging like most leafy salads do. Good olive oil, chilli and lemon rind add dazzle and bring all elements together nicely. Perfect for healthy weekday dinner or great as a packed lunch.
Smoked Mackerel Beetroot Fennel Salad
2 smoked mackerel fillets (or 1 large), torn into medium-sized pieces
4 baby new potatoes, boiled and cut in half
2 soft cooked beetroot, cut into quarters
2 handfuls baby spinach leaf
2 handfuls rucola salad
1/2 fennel bulb, shaved into thin pieces
rind of 1/2 lemon
1 small red chilli, seeds removed and chopped very fine
1 tbsp good olive oil
2 tbsp lemon juice
Seas salt and cracked black pepper
- Combine olive oil, lemon juice, chilli, salt and pepper in a jar and shake well until combined.
- In a large bowl place spinach leaves, rucola, beetroot, potatoes, fennel and lemon rind, pour over dressing and combine well.
- Divide into 2 bowls, scatter with smoked mackerel.
